A delicious Danish Dream Cake to cure your wanderlust
In a time when we can’t travel as much as we’d all like, you’ve got to find new ways to explore… This Danish Dream Cake is the perfect opportunity to be transported overseas. It’s quick, fun and simple to make and only uses a handful of basic ingredients. As the name suggests, it’s pure heaven. Cut a slice and enjoy with a cup of coffee or share with friends on a summer picnic. We substituted the sugar for coconut sugar but for a more authentic feel, follow the recipe below.
Ingredients:
Cake:
250g plain flour
250g sugar
50g butter
3 eggs
200ml milk
2 tsp baking power
1 tsp vanilla essence
Topping:
125g butter
50ml milk
200g brown sugar
100g coconut flakes
Method:-
- Whisk the eggs and sugar until light and fluffy.
- Melt the butter and add the milk to the saucepan and stir. Add to the eggs and sugar.
- In a separate bowl, combine the flour, vanilla essence and baking powder. Add to the other bowl, and mix it all together into a smooth batter.
- Line a baking tray (about 25×35 cm) and add the batter.
- Bake the cake at 200 C (400 F) for about 20-25 minutes. When the cake is in the oven, prepare the coconut topping.
For the coconut topping:-
- Melt the butter in a saucepan.
- Add the milk and the brown sugar and let it simmer for about a minute.
- Add the coconut flakes and mix it well.
- When the cake has been in the oven for about 20-25 minutes. Take it out and pour the coconut mixture over the it. Use a knife to spread the topping evenly.
- Bake the cake for another 10 minutes. Leave to cool and enjoy!
