Dandelion Honey – an abundant flower honey that is vegan friendly, foraging fun and very easy to make
Foraging is fun! And this is a delightful and easy recipe that the talented Emily Hogarth shared recently on Instagram and inspired us with. Dandelion Honey — vegan friendly, easy to make, inexpensive to make, and fun to collect. It is a super lovely way to add to yoghurt or dress up French Toast or pancakes!
All you need are three ingredients — sugar, lemon and fresh yellow dandelion flower heads. Add some water and make your own lovely honey.
We love the recipe inspired by Vegan on Board and have made a few tweaks.
- 2 cups fresh dandelion flowerheads, densely packed
- 3 thin slices lemon
- 1.5 cups water
- about 1.5 cups organic sugar
Shake or blow the flowers to remove any bugs
Place the water, lemon slices and dandelion flowers in a saucepan
Gently simmer with a lid on for 20 minutes
Leave lid on and let this cool and infuse overnight (on the countertop)
The next day, strain out the flowers and lemon by pouring the liquid through a muslin cloth. (For this we love our nuscheli!) Press down to make sure you get all of that dandelion juice out.
Weigh the liquid, and then weigh out the same amount sugar.
Put the liquid back in the pan and add the sugar. Stir and heat gently at first until the sugar is dissolved. Then bring it up to a gentle boil for approximately 15 minutes. Or until it clings to the back of a spoon.
Then pour into clean sterilised jars and put the lids on while it’s still hot
